A Healthy Fish Dish For The Holidays

For those frazzled days, here is quick and healthy meal packed with phytonutrients and Omega-3's for brain and mood support, which can be much needed for the upcoming Holiday season. This dish is great for company too and is always a hit!



One Pan Mediterranean Style Fish

(adapted from Primally Inspired)


Ingredients:

- 1.5 (4- 6oz pieces) fish of choice; I’ve used salmon, walleye and cod

- 1 lemon, juiced

- ½-1 tsp sea salt (to taste)

- ½ tsp black pepper (to taste)

- 1-2+ tsp dried oregano (to taste)

- 2 Tbsp avocado oil for sauteing

- 1 large onion, sliced

- 3 cloves garlic, minced

- 2 cups cherry tomatoes (use 2 pint containers or if you have Sam’s or Costco I use the large container)

- ½ cup pitted kalamata olives

- 2 cups fresh baby spinach


Instructions:

- Prep the fish: Pour half the lemon juice, salt, pepper, and dried oregano over the fish and set aside.

- Add the avocado oil to a large, heavy bottomed skillet. Over medium heat, saute the sliced onion until just soft; add the minced garlic and cook for an additional 30 seconds until garlic is fragrant.

- Add the cherry tomatoes, olives, and the remaining lemon juice to the skillet and cook for ~5 minutes until a few of the cherry tomatoes begin to burst.

- Nestle the fish in the skillet, cover and cook for 5 minutes or until the fish flakes easily with a fork.

- Add the spinach to the skillet during the last minute of cooking or when the fish is almost done: turn off the heat, cover, and allow the spinach to wilt. Serve and enjoy!
